La Siega
La siega a mano, que durante siglos fué en Xares tarea habitual en las tardes de la segunda quincena del mes de Julio, perdió su sentido al ser sustituida la harina de centeno cosechado en el mismo pueblo, por harina de trigo tratada industrialmente, por los avances tecnológicos y por la despoblación sufrida por el pueblo. Sin embargo la técnica del segado a mano no ha quedado en el olvido y son muchos los vecinos que ahora habitan el pueblo, los que recuerdan con nostalgia aquella dura tarea, tan antigua como el mismo pueblo. El primer trabajo para poder cosechar el centeno, comenzaba en el mes de Marzo, cuando la tierra era arada, lo que se llamaba "ralbar", volviéndo a pasar el arado en el mes de Mayo "bilmar". En Septiembre se abonaba con estiercol y se sembraba el centeno, cuya cosecha se recogía en el mes de Julio del año siguiente, dejando el terreno en bruto para volver a ararlo de nuevo en Marzo, aunque también este mismo mes se sembraban patatas para volver a resembrar de centeno el mismo terreno en septiembre. También hay que decir que el centeno servía de sustento a las codornices, por lo que al haber mas terreno sembrado había gran abundancia de esta especie.
Dentro de la cultura en torno al centeno hay que reseñar que el Domingo de Ramos se llevaba uno de los ramos a la tierra para proteger la cosecha.La siega se iniciaba una vez acabada la temporada de siega y recogida de la hierba, por la mañana, al amanecer generalmente, las mujeres y mozos salían andando hacia las tierras, ubicadas a varios kilometros del pueblo, en el monte, para comenzar la tarea. Con la mano izquierda cogían una mañiza mientras con el hocín en la mano derecha la cortaban, dejándola en el suelo, con ayuda del hocín para evitar que la paja se rompa por el peso de las espigas, hasta reunir tres mañizas juntas, que denominaban gavilla y con tres gavillas juntas, hacían un mollo, del que sacaban con destreza varias pajas para atarlo.Mientras unos segadores van avanzando en el corte, en una línea mas o menos recta, repitiendo los mismos movimientos, otros van recogiendo las gavillas y atando los mollos, que van dejando repartidos en filas a lo largo del terreno.
Al dia siguiente, se recogían con el carro y eran transportados, con la espiga hacia el centro hasta la era, donde eran apilados en un montón llamado meda, también con el grano hacia dentro para protegerlo de la posible lluvia, después de haber cortado unas ramas, generalmente de roble, que servirán para aislarla del suelo en caso de lluvia. Los mollos se van colocando inclinados a modo de tejado para que en caso de que llueva, el agua rebale por la paja y la espiga permanezca seca, comenzando con una anchura que se va estrechando para acabar en pico y que puede llegar a tener una altura de cuatro o cinco metros. Cada vecino propietario de una parte de la era tenia su meda en una zona reservada para él, así en una era propiedad de varios vecinos cada uno tenía su espacio con su meda, dejando la parte central de la era libre para permitir mallar y trillar posteriormente.

En Setembro aboábase con estiercol e sementábase o centeo, cuxa colleita recollíase no mes de Xullo do ano seguinte, deixando o terreo en bruto para volver a aralo de novo en Marzo, aínda que tamén este mesmo mes se sementaban patacas para volver a resembrar de centeo o mesmo terreo en setembro. Tamén hai que dicir que o centeo servía de sustento ás codornices, polo que ao haber mais terreo sementado había gran abundancia desta especie.
Dentro da cultura en torno ao centeo hai que indicar que o Domingo de Ramos levábase un dos ramos á terra para protexer a colleita.Ségaa iniciábase unha vez acabada a tempada de sega e recollida da herba, pola mañá, ao amencer xeralmente, as mulleres e mozos saían andando para as terras, situadas a varios kilometros do pobo, no monte, para comezar a tarefa. Coa man esquerda collían unha mañiza mentres co hocín na man dereita cortábana, deixándoa no chan, con axuda do hocín para evitar que a palla se rompa polo peso das espigas, ata reunir tres mañizas xuntas, que denominaban gavela e con tres gavelas xuntas, facían un mollo, do que sacaban con destreza varias pallas para atalo.Mentres uns segadores van avanzando no corte, nunha liña mais ou menos recta, repetindo os mesmos movementos, outros van recollendo as gavelas e atando os mollos, que van deixando repartidos en filas ao longo do terreo.
Ao dia seguinte, recollíanse co carro e eran transportados, coa espiga para o centro ata a era, onde eran apilados nunha morea chamado meda, tamén co gran para dentro para protexelo da posible chuvia, despois de haber cortado unhas ramas, xeralmente de carballo, que servirán para illala do chan en caso de chuvia. Os mollos vanse colocando inclinados a modo de tellado para que en caso de que chova, o auga rebale pola palla e a espiga permaneza seca, comezando cun largo que se vai estreitando para acabar en pico e que pode chegar a ter unha altura de catro ou cinco metros.
